RSPCA Australia seems to be the main charity for relief and rescue to non-human bushfire victims. There's a link on that page for donating online.

Australian Red Cross are your best bet for donating to help human victims, except their website's apparently down. Hopefully it'll be back up soon. (Edited to add: it's up again now. Increased load on the servers is making it a bit intermittent, so keep trying.)
