So I gave in and bought tortilla wraps. I will try and make them again, but I forgot to buy lard and I'm not convinced I can make them not-cardboardy. Am wondering if I can do something like I want using a savoury pancakey-style batter instead.

But in the meantime, this is what I'm wrapping in them:

a small bowlful of frozen petit-pois, lightly nuked, cooled and strained
ditto frozen sweetcorn
about 3/4 of a pound of fresh mushrooms, chopped small, drizzled lightly with sesame oil and briefly nuked till they're just not-raw. Must be strained otherwise there's too much water, but I drank the juice.

One small onion, chopped small.

Handful of frozen chopped spinach, defrosted (not nuked) and pressed through the strainer till it's as dry as I can get it.

I would have added chopped raw red peppers if I'd had any...

Mix it all together and add a dollop of low-fat Caesar-salad dressing I bought because Sainsbury's had a half-price offer on it.


Woah healthy eating! (Well, healthier than my usual standards) Also convenience, because I can keep a tub of it in the fridge and have many faff-free meals. Joy.

Carnivore that I am, I'll eat it with ham slices or cooked chopped chicken, but it'd be fine on its own.

It can't hurt. I've heard that a lot of health problems can be traced to an improper diet.

Of course, I'm not exactly one to talk... if it doesn't come frozen, I don't generally eat it unless it's pasta.

As soon as I move and we can unpack (hahahahah. I make myself laugh.) I have tortilla recipes - some very easy. I will get them for you. I plan to experiment with them as well, because I LOVE them. :-)

I have to apologize about the move crap. We still plan to adopt Callette, so I want you to know that I don't plan to back out. I even have some holiday time put aside to spend a couple of days with her and Arrietty together to keep an eye on them (and reassure them)when they are first introduced. All I can say is this sucks.

If you have a shallow saute pan or skillet, try sauteeing the veggies (with the exception of the spinach, though you can saute it, too, if you want... Just be careful not to burn it) with a little sesame or olive oil to toss it in... You'll make the flavors of the veggies come together better, and it will be absolutely lovely with chopped ham or chicken!

I think I have some recipes for savory crepes (what you would end up with if you used a pancake type batter instead of tortilla)... I'll have to look. If not, I lovelovelove www.allrecipes.com as a resource for all manner of yummy, easy to prepare recipes.

Oooh, or a wok... a wok would work, too. Stir frying and sauteeing are similar enough to work either way.

That's true, I could have done - I just wanted to keep the fat content as low as possible. Plus the microwave bowl's less hassle to wash than the frying pan.

I could make crepe batter in my sleep... I just haven't got the technique right with tortillas yet. Plus all that rolling pin action is hard on my dodgy elbow.
